Marinated Fish
Pescado en Escabeche
Marinade: 1 cup extra virgin olive oil 1/2 cup vinegar 1/2 teaspoon cracked black pepper 1/4 teaspoon salt 3 or 4 medium onions, sliced thin 1/4 cup pimientos, chopped 1/2 cup small stuffed olives
For the Fish: 1 1/2 pounds fish steaks (red snapper or other meaty fish) Fresh lime, salt, pepper, flour for light dredging 1/2 cup extra virgin olive oil for frying
Combine marinade ingredients in saucepan, simmer over low heat about 45 minutes. Cool. Rinse and dry fish, sprinkle with lime, salt and pepper, lightly flour both sides. Heat oil in heavy skillet. Brown fish on both sides. Reduce heat, cook about 15 minutes more or until fish flake easily with a fork. Put fish into glass baking dish, cover with marinade. Cover dish, refrigerate overnight. Serve cold.
Yield: 4 to 8 servings
